Summersalt Beach Club’s talented head chef, Hernan Ruiz thoughtfully crafted a special menu of delicious dishes that encapsulated Palm Jebel Ali, a collection of upmarket districts on a palm-shaped island that is destined to become Dubai’s most talked-about waterfront location.
Inspired by Palm Jebel Ali’s beautiful vistas and picture-perfect position on the Arabian Gulf, Hernan curated an enticing brunch menu that represented various facets of island life. Layered black cod, for example, symbolised land, sea and growth. Lobster ceviche encouraged diners to think of the coastal breeze, while grilled palm heart was emblematic of the landscape.
“I wanted to take the vision and lifestyle of Palm Jebel Ali and translate it to a dining experience,” explains Hernan. “Every dish reflected the island’s essence. I wanted guests to feel a sense of place and curiosity when they took their first bite.”
